Our Olive Juice

Arbequina.
First Harvest.

Taking advantage of our geographic zone at the beginning of October our first oil is being harvested and milled.

For the most gourmet palates we offer this authentic ambrosia, which due to its precocity and immaturity amasses all the supreme organoleptic properties and qualities of genuine olive juice.

Tasting note

Olive juice of an intense green colour, obtained from the fruit of the olive trees at the veraison stage with some slight ripe traces.

Aroma in glass it presents a very powerful fruitiness of fresh grass and olive leaves, together with some soft touches of fresh apple, almond and to a smaller extend of green tomato.

Flavour in mouth it presents a surprisingly balanced start between sweet and uniform, without any pungency or bitterness, converting it into a pleasure for our palate.

Arbequina with tomato

A very good oil produced from olives just about to ripen mixed with top quality fresh tomatoes.

The aroma presents a medium-high level of fruitiness from green olives and tomatoes, with a hint of apple.

It has a very sweet and light start to the mouth, with touches of pungency and bitterness. It is suitable for dressing all types of salad, cod dishes, and is particularly good with toasted bread.

Arbequina with apple

A very good oil produced from olives just about to ripen mixed with top quality green apples.

Its aroma presents a medium level of fruitiness from green olives, with a hint of apple.

Like the previous oil, its start to the mouth is very sweet, with touches of pungency and bitterness. Its smoothness makes it particularly suitable as a dressing for salads of fresh fruit and vegetables. It is a fantastic oil for dressing any dish containing foie, and can be used to make apple oil-based sorbets or ice creams.

Coupage. Arbequina, Picual, Manzanilla y Acebuchina

Extra virgin olive oil of the supreme quality elaborated by a coupage or blending of four varieties. The arbequina, picual and manzanilla varieties make up a well-balanced and intense coupage while the acebuchina, the ancestor of all existing varieties in Spain, provides purity, exquisiteness and unique organoleptic properties converting it into a genuine delicatessen for the most demanding tastes.

Tasting notes

Medium fruity olive juice, obtained from the fruit of the olive trees at the veraison stage with some slight ripe traces.

Aroma in glass – it presents aromas of fresh grass and olive leaves, together with some soft touches of fresh apple, almond and to a smaller extend of green tomato.

Flavour in mouth – it presents a surprisingly sweet start combing later with balanced and soft pungency and bitterness, which indicates its origin from a fresh fruit undergone a cold extraction.

Arbequina with lemon

A very good oil produced from olives about to ripen mixed with top quality lemons.

Its aroma presents a medium-high level of fruitiness from lemons and green olives.

Lemon is the prevalent taste in the mouth; its start is very sweet and light, with slight but well-balanced levels of pungency and bitterness.

This oil is very suitable for tartare and carpaccio dishes, confectionery, sorbets and ice creams.

Acebuchina

Olive juice of medium-low levels of fruitiness produced from olives just about to ripen, with slight notes of ripe olives.

An aroma with woody notes; in the mouth is has medium levels of pungency and bitterness.

This is an extra virgin oil with a difference, because of its particular health-giving qualities. Its main merits lie in its medical potential with anti-inflammatory, cardiovascular protection and anti-oxidant properties, all due to its high polyphenol content, higher than any other oil grown.

These qualities are the reason why we at Oleum Summ decided to develop this 100% single variety acebuchina (wild olive).
